From reading the help, it would seem that jitter would only matter for jitter-sensitive applications.

Is there a list of jitter-sensitive applications?

I'm trying to test the pingplotter, but I see the jitter, but I'm not sure if this is an issue I need to worry about, or a non-issue.

We don't have a specific list of jitter-sensitive applications.

In general, though, any "realtime" application is very sensitive to jitter. Voice over IP, some Video over IP, gaming, remote desktop, etc.

Web browsing is pretty tolerant to jitter and lives fine with a few hundred milliseconds of jitter. Anything that can "queue up" data is pretty tolerant to jitter (because it can keep working out of its queue while things catch up).
