How do I configure to testing latency of website/webpage latency, eg. load of the webpage or latency of the website?

We've got an extension for PingPlotter Pro that sounds like it should accomplish what you're after. Have a look here for more details:

One important thing to make note of; PingPlotter is designed to measure *network* latency - and this extension measures *service* latency. If you're using this extension - it's usually a good practice to make sure you've got a few traces running to this target (one using the script, and one without) to make sure you're capturing all of the pertinent information.
